Bostwick’s Chowder House
The New England clam chowder is perhaps first to try on the locally sourced menu, but Bostwick’s has also developed a light, fresh lobster roll. “At Bostwick’s, our lobster salad is made with mostly tail meat, Hellmann’s mayo, celery, parsley and lemon juice,” chef and co-owner Chris Eggert says. “We keep it simple but fresh and choose the best-quality lobster. We also offer a hot lobster roll, which is simply fresh lobster meat sauteed in butter.” 277 Pantigo Road, East Hampton
Duryea’s Lobster Deck
A favorite for its dockside location and canopy of shady umbrellas, Duryea’s is a fan favorite for rolls with a view. “Our lobster roll is made from daily freshly picked lobster meat—100 percent lobster meat, no filler,” chef Pierre Sudre says. “We mix it with very light mayonnaise dressing and fresh chopped celery to bring up the delicate flavor of the lobster without overwhelming it. The lobster salad is served on a toasted to order buttery potato roll with housemade crispy sweet potato chips and homemade coleslaw.” 65 Tuthill Road, Montauk
The Lobster Roll
Although this eatery sells a variety of seafood staples such as clams on the half shell and Blue Claw crabcakes, the crux of The Lobster Roll lies in its name. Sold hot or cold, this famous lobster roll boasts cold-water lobster meat, a toasted split-top bun and a quarter-pound of housemade coleslaw. For just a snack, try the lobster or shrimp salad sliders. 1980 Montauk Highway, Amagansett
Shinnecock Lobster Factory
This roadside stand would be easy to miss were it not for the giant lobster waving out front and the undeniably perfect recipe. The exact balance of butter, lemon, salt and spiciness lifts the ample lobster meat up to its best performance. Shinnecock Lobster Factory also features untraditional takes such as the lobster melt panini and lobster fritters, but any lobster roll purist will be happy here. 42 Montauk Highway, Southampton
